  • 1 unbaked 9-inch pie crust
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup pecans chopped or halved

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the pie crust by rolling it out if homemade, and place it in the pie pan, crimping edges if desired.
  3. In a mixing bowl, whisk together the light corn syrup, granulated sugar, eggs, melted butter, vanilla extract, and salt until smooth, about 2 minutes.
  4. Stir in the pecans until evenly distributed.
  5. Pour the filling into the prepared pie crust carefully to avoid spilling.
  6. Bake in the preheated oven for approximately 50 minutes or until the filling is set and the top is golden brown.
  7. Remove the pie from the oven and let it cool on a rack for at least 2 hours to allow the filling to firm up.
  8. Slice and serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Allow the pie to cool completely before slicing for clean cuts. Toast pecans beforehand for extra flavor.
