- Preheat oven to 350°F (175°C). Grease a 9x9 inch baking dish with butter or cooking spray.
- Combine cubed bread and sliced bananas in a large bowl, gently tossing to distribute evenly.
- In another bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, and salt to make the custard.
- Pour the custard mixture over the bread and bananas, pressing down with a spatula to soak the bread completely.
- Let sit for 10-15 minutes to allow the bread to absorb the custard.
- Transfer the dish to the preheated oven and bake for approximately 45 minutes, until the top is golden brown and the center is set.
- Remove from oven and let cool for a few minutes. Serve warm or cold, topped with whipped cream or ice cream.
Notes
Use day-old or stale bread for better absorption. Experiment with different bread types like brioche or challah for added richness. Don’t skip the cinnamon as it enhances the flavor. Toasted nuts or caramel sauce can be added for extra crunch and flavor.
