  • 2 ripe bananas mashed
  • 1 cup water
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon optional

Method
 

  1. Peel and mash the bananas in a bowl until smooth.
  2. In a medium saucepan, combine the mashed bananas, water, and sugar, stirring until the sugar dissolves.
  3. Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
  4. Once boiling, reduce heat to low and simmer for about 10 minutes, stirring occasionally.
  5. Stir in the vanilla extract and cinnamon, then simmer for an additional 2 minutes.
  6. Remove the saucepan from heat and let the syrup cool for a few minutes.
  7. Transfer the syrup to a jar or container and refrigerate until ready to use.

Notes

Store syrup in a sealed container in the refrigerator for up to two weeks. Reheat gently before serving.
