Method
- Start by rinsing the chicken thighs under cold water and patting them dry to remove any residual bacteria. This takes about 2 minutes.
- In a mixing bowl, combine the olive oil, garlic powder, onion powder, salt, and pepper. Mix well to create the seasoning blend. This takes 2 minutes.
- Rub the seasoning mixture all over the chicken thighs, ensuring each piece is coated thoroughly. This takes 3 minutes.
- Preheat the grill to medium-high heat, around 375-400°F (190-200°C). Allow it to heat for about 5 minutes.
- Place the chicken thighs skin-side down on the grill. Sear for 10 minutes to achieve a crispy, golden skin.
- Flip the chicken and start basting with barbecue sauce. Use a basting brush to apply the sauce evenly. Continue grilling for another 10-15 minutes, flipping and basting as needed.
- Use a meat thermometer to check the internal temperature. Cook until the chicken reaches 165°F (74°C). This typically takes an additional 10-15 minutes.
- Once cooked through, remove the chicken from the grill and let it rest for 5 minutes to allow juices to redistribute.
Notes
For extra flavor, marinate the chicken in barbecue sauce overnight. Maintaining lid closure during grilling preserves heat and smoke for richer flavor.
