- In a large mixing bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt for about 1-2 minutes until well blended.
- Place your non-stick skillet or griddle over medium heat and add a small pat of butter. Allow the butter to melt and heat up for about 1-2 minutes.
- One slice at a time, dip the bread into the egg mixture, ensuring both sides are coated. Do not soak too long to prevent sogginess.
- Place the coated bread onto the hot skillet. Cook for about 2-3 minutes on each side until golden brown, flipping with a spatula.
- Continue to cook remaining slices, adding more butter to the skillet as needed.

Notes
Use day-old bread for best absorption. You can substitute with brioche or sourdough for extra flavor. For vegan version, replace eggs with a flax egg (1 tablespoon ground flaxseed + 3 tablespoons water).
