Ingredients
  

Main
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup diced onion
  • 1/2 cup BBQ sauce plus more for topping
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chopped bell pepper optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease your loaf pan with non-stick spray or olive oil.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, diced onion, BBQ sauce, egg, garlic powder, salt, black pepper, and chopped bell pepper if using. Mix until well combined.
  4. Transfer the mixture to the loaf pan and shape into a loaf.
  5. Spread a layer of BBQ sauce over the top of the meatloaf.
  6. Bake in the preheated oven for about 1 hour or until the internal temperature reaches 160°F (70°C).
  7. Check doneness with a meat thermometer.
  8. Let the meatloaf rest for 10 minutes before slicing.

Notes

Resting the meatloaf helps retain moisture and improves texture.
