  • 2 lbs beef chuck cut into 1-inch cubes
  • 3 tablespoons vegetable oil
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 bell pepper chopped (red or green)
  • 2 large potatoes peeled and diced
  • 1 cup carrots sliced
  • 1 can 15 oz tomato sauce
  • 1 tablespoon soy sauce
  • 1 cup beef broth
  • 2 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper to taste

Method
 

  1. Cut the beef chuck into 1-inch cubes.
  2. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat and brown the beef cubes on all sides, about 5 minutes.
  3. Add the chopped onion and minced garlic and sauté until fragrant and translucent, about 3 minutes.
  4. Stir in the tomato sauce and cook for 2 minutes to combine flavors.
  5. Pour in the beef broth and soy sauce, stirring to mix.
  6. Add the chopped bell pepper, diced potatoes, and sliced carrots to the pot.
  7. Season with bay leaves, paprika, salt, and pepper.
  8. Reduce heat to low, cover, and simmer for 1 hour 30 minutes or until beef is tender.
  9. Remove the bay leaves and adjust seasoning before serving.

Notes

For even richer flavor, let the caldereta rest for a few hours or overnight in the refrigerator to allow flavors to deepen.
