- Cut the beef chuck into 1-inch cubes.
- Heat the vegetable oil in a large pot or Dutch oven over medium-high heat and brown the beef cubes on all sides, about 5 minutes.
- Add the chopped onion and minced garlic and sauté until fragrant and translucent, about 3 minutes.
- Stir in the tomato sauce and cook for 2 minutes to combine flavors.
- Pour in the beef broth and soy sauce, stirring to mix.
- Add the chopped bell pepper, diced potatoes, and sliced carrots to the pot.
- Season with bay leaves, paprika, salt, and pepper.
- Reduce heat to low, cover, and simmer for 1 hour 30 minutes or until beef is tender.
- Remove the bay leaves and adjust seasoning before serving.

For even richer flavor, let the caldereta rest for a few hours or overnight in the refrigerator to allow flavors to deepen.
