  • 1 pound beef chuck cut into bite-sized pieces
  • 8 cups beef broth
  • 3 cups egg noodles
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 carrots sliced
  • 1 cup snap peas or bok choy
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Method
 

  1. Heat a large pot over medium-high heat. Sear beef pieces until browned on all sides, about 5 minutes.
  2. Add diced onion and minced garlic to the pot, and cook until softened and fragrant, about 2-3 minutes.
  3. Pour in the beef broth and bring to a boil over high heat.
  4. Return the seared beef to the pot. Reduce heat to low, cover, and simmer for 30 minutes.
  5. Add sliced carrots and snap peas (or bok choy) to the pot, and cook until vegetables are crisp-tender, about 5 minutes.
  6. Stir in egg noodles and cook until al dente, about 5-7 minutes.
  7. Season with soy sauce, sesame oil, and salt and pepper to taste. Stir well to combine.
  8. Ladle soup into bowls and garnish with sliced green onions before serving.

Notes

For an extra layer of flavor, let the soup sit for a bit before serving so the flavors meld beautifully.
