  • 1 lb ground beef or sausage
  • 1 can 10 oz Rotel diced tomatoes with green chilies
  • 1 can 10 oz cream of mushroom soup
  • 16 oz Velveeta cheese cubed
  • 1-2 jalapeƱos diced (optional for heat)

Method
 

  1. In a large skillet over medium heat, add 1 lb ground beef or sausage and cook for 7 minutes, stirring occasionally, until browned.
  2. Drain excess fat from the skillet to prevent the dip from becoming greasy.
  3. Add 1 can (10 oz) Rotel diced tomatoes with green chilies, including the juices, and stir to combine.
  4. Stir in 1 can (10 oz) cream of mushroom soup until the mixture is smooth and well blended.
  5. Reduce heat to medium-low and gradually add 16 oz Velveeta cheese, cubed, stirring constantly for about 5 minutes until fully melted.
  6. If using heat, fold in 1-2 diced jalapeƱos and cook for an additional 1-2 minutes.
  7. Continue stirring for 2-3 minutes until the dip is uniform and heated through.
  8. Transfer the hot dip to a serving bowl and serve immediately with tortilla chips.
