  • 4 mahi mahi fillets about 6 ounces each
  • 2 tablespoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. In a medium bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper to make the spice mix.
  2. Pat the mahi mahi fillets dry with paper towels and coat both sides evenly with the spice mix, pressing to adhere.
  3. Heat a skillet or cast-iron pan over medium-high heat for 5 minutes until hot.
  4. Add olive oil to the hot skillet and swirl to coat the surface.
  5. Place the seasoned fillets in the skillet and sear for 3 to 4 minutes on each side, or until a deep brown crust forms.
  6. Check doneness by ensuring the fish flakes easily with a fork and is opaque throughout.
  7. Remove the fillets from the skillet and let rest for 2 minutes to retain juices.
  8. Serve immediately with your favorite sides, squeezing fresh lemon over the fish if desired.
