- Heat the olive oil in a large pot or Dutch oven over medium heat until shimmering, about 2 minutes.
- Add the ground beef and ground sausage and cook over medium-high heat, breaking it apart, until browned, about 8 minutes.
- Stir in the chopped onion and minced garlic and cook until the onion is translucent and fragrant, about 3 minutes.
- Add the drained kidney beans and diced tomatoes with their juices and stir to combine.
- Sprinkle in the chili powder, cumin, smoked paprika, and cayenne pepper and stir to coat the ingredients.
- Pour in the lager beer, scraping up any browned bits from the bottom of the pot.
- Bring the mixture to a gentle boil, then reduce the heat to low and simmer, uncovered, for 30 minutes.
- Season with salt and pepper to taste, garnish with fresh cilantro if desired, and serve hot.
