Ingredients
  

Main
  • 1 lb ground beef or turkey
  • 1 cup chopped onions
  • 2 cups diced tomatoes canned or fresh
  • 1 cup kidney beans or black beans
  • 1 cup corn frozen or canned
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Method
 

  1. Heat 1 tbsp olive oil in a large pot over medium heat. Sauté the chopped onions until they become translucent, about 5 minutes.
  2. Add 1 lb ground beef or turkey to the pot. Cook until browned and no longer pink, stirring occasionally to break it up, about 7 minutes.
  3. Add 2 tsp cumin and 1 tsp paprika, stirring to coat the meat and onions.
  4. Stir in 2 cups diced tomatoes and 1 cup kidney beans or black beans, mixing well to combine.
  5. Add 1 cup corn and stir for even distribution.
  6. Pour in 2 cups vegetable broth, then season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce heat to low and simmer, uncovered, for 20 minutes to meld flavors.
  8. Once thickened, serve the Borg Recipe warm with crusty bread or rice for a complete meal.

Notes

For extra depth of flavor, try adding a splash of hot sauce or a squeeze of lime juice just before serving.
