Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Grease an 8x8 inch baking dish with cooking spray or oil.
  3. In a large mixing bowl, whisk together 1 cup cornmeal, 1 cup all-purpose flour, 1 tablespoon baking powder, 1 teaspoon salt, and 1/4 cup sugar.
  4. In another bowl, whisk 1 cup milk, 2 large eggs, and 1/4 cup vegetable oil until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  6. Gently fold in 1 cup cooked and chopped broccoli and 1 cup shredded cheddar cheese.
  7. Transfer the batter to the prepared baking dish and spread evenly with a spatula.
  8. Bake for 25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Let the cornbread cool in the pan for 5 minutes before slicing and serving.
