  • 1 cup diced jalapeños fresh or pickled
  • 2 large eggs
  • 1 cup breadcrumbs or crushed crackers
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro optional

Method
 

  1. Preheat the oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine the shredded cheese, diced jalapeños, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper; stir until well mixed.
  4. Taste the mixture and adjust seasoning with additional salt and pepper if desired.
  5. Form the mixture into small balls or patties using your hands.
  6. Place the bites on the prepared baking sheet, spacing them evenly.
  7. Bake for 25 minutes or until the bites are golden and crisp.
  8. Allow the bites to cool slightly on the baking sheet before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat in a 350°F (175°C) oven until warmed through.
