Ingredients
  

Main
  • 1 medium head of cabbage chopped into bite-sized pieces
  • 4 medium potatoes peeled and diced
  • 1 medium onion diced
  • 3 tablespoons olive oil for sautéing
  • 2 cups vegetable or chicken broth for flavor
  • Salt and pepper to taste
  • 1 teaspoon garlic powder for added depth

Method
 

  1. Chop the cabbage into bite-sized pieces and dice the potatoes and onion.
  2. Heat 3 tablespoons of olive oil in a large pot over medium heat.
  3. Add the diced onion and cook until translucent, about 5 minutes.
  4. Stir in the diced potatoes and cook for another 5 minutes.
  5. Add the chopped cabbage to the pot and cook until wilted, about 3 minutes.
  6. Pour in 2 cups of vegetable or chicken broth, season with salt and pepper, and bring to a simmer.
  7. Sprinkle in 1 teaspoon of garlic powder and stir well.
  8. Cover and simmer over medium-low heat for 20 minutes, stirring occasionally, until the vegetables are tender.
