Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 lb andouille sausage diced
  • 1 cup onion finely chopped
  • 1 cup green bell pepper finely chopped
  • 1 cup celery finely chopped
  • 4 cloves garlic minced
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Method
 

  1. Heat the 2 tablespoons vegetable oil in a large skillet or Dutch oven over medium heat.
  2. Sauté the 1 cup onion, 1 cup green bell pepper, and 1 cup celery for about 5 minutes until softened.
  3. Add the 1 lb diced andouille sausage and cook for 5 minutes until browned.
  4. Stir in the 4 cloves minced garlic and cook for 1 minute until fragrant.
  5. Sprinkle 1 tablespoon Cajun seasoning and 1 teaspoon thyme over the mixture and stir to coat.
  6. Add the 2 cups long-grain white rice and stir to combine, cooking for 1 minute to toast slightly.
  7. Pour in 4 cups chicken broth and stir well, then bring to a boil over medium-high heat.
  8. Reduce heat to low, cover, and simmer for 20 minutes until rice is tender and liquid is absorbed.
  9. Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork before serving.

Notes

Allowing the rice to rest before fluffing enhances texture and flavor. Serve with coleslaw or cornbread for a complete meal.
