- Heat the 2 tablespoons vegetable oil in a large skillet or Dutch oven over medium heat.
- Sauté the 1 cup onion, 1 cup green bell pepper, and 1 cup celery for about 5 minutes until softened.
- Add the 1 lb diced andouille sausage and cook for 5 minutes until browned.
- Stir in the 4 cloves minced garlic and cook for 1 minute until fragrant.
- Sprinkle 1 tablespoon Cajun seasoning and 1 teaspoon thyme over the mixture and stir to coat.
- Add the 2 cups long-grain white rice and stir to combine, cooking for 1 minute to toast slightly.
- Pour in 4 cups chicken broth and stir well, then bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 20 minutes until rice is tender and liquid is absorbed.
- Remove from heat and let stand, covered, for 5 minutes, then fluff with a fork before serving.
Notes
Allowing the rice to rest before fluffing enhances texture and flavor. Serve with coleslaw or cornbread for a complete meal.
