Ingredients
  

Main
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste

  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Knife and cutting board

Method
 

  1. Heat the vegetable oil in a large pot or deep skillet over medium heat until shimmering.
  2. Add the diced onion and bell pepper and sauté for 5 minutes until soft and fragrant.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the Cajun seasoning and smoked paprika and stir to coat the vegetables.
  5. Add the rice and stir for 1-2 minutes to toast and coat each grain with spices.
  6. Pour in the chicken broth and increase heat to high; bring to a boil.
  7. Once boiling, reduce heat to low, cover, and simmer for 20 minutes until the rice is tender and the liquid is absorbed.
  8. Remove from heat and let the rice sit, covered, for 5 minutes.
  9. Fluff the rice with a fork and season with salt and pepper to taste.

Notes

For extra flavor, let the rice rest covered after cooking to allow the seasoning to fully absorb.
