Ingredients

Main
  • 1 pound of protein chicken, sausage, or tofu
  • 2 cups of assorted vegetables bell peppers, onions, corn
  • 2 tablespoons of olive oil
  • 1 tablespoon of your favorite seasoning blend
  • Salt and pepper to taste
  • Optional ingredients: cheese herbs, hot sauce

Equipment

  • Campfire or grill
  • Cast iron skillet or grill grate
  • Skewers
  • Aluminum foil
  • Mixing bowl
  • Utensils for mixing and serving

Method

  1. Chop the protein and vegetables into bite-sized pieces to ensure even cooking.
  2. In a mixing bowl, combine chopped protein and vegetables, drizzle with olive oil, sprinkle with seasoning blend, season with salt and pepper, and mix to coat evenly.
  3. Lay out 4 large sheets of aluminum foil and divide the mixture among the sheets, leaving space at the edges to fold.
  4. Fold and crimp the foil edges to seal each packet tightly, trapping moisture inside.
  5. Place the foil packets on a preheated grill or over a medium-high campfire and cook for 30 minutes, turning packets once or twice for even cooking.
  6. After 20 minutes, carefully open one packet to check that the protein is fully cooked and vegetables are tender; cook up to 30 minutes if needed.
  7. If desired, sprinkle cheese or drizzle hot sauce over the packet contents before sealing again.
  8. Remove packets from heat, carefully open to avoid steam, and serve immediately.

Notes

Always double-wrap your packets with foil to prevent any leaks and keep the flavors inside.
