- In a mixing bowl, combine 2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/2 teaspoon salt.
- Cut in 3 tablespoons vegetable shortening until the mixture resembles coarse crumbs.
- Gradually add 3/4 cup warm water and mix until a soft dough forms.
- On a floured surface, knead the dough for about 2 minutes until smooth.
- Divide the dough into 8 equal pieces and roll each into a 6-inch circle about 1/8-inch thick.
- Heat oil in a frying pan or deep fryer to 350°F (177°C). Fry each shell for 2–3 minutes per side until golden brown; drain on paper towels.
- In a separate pan over medium heat, cook 1 pound ground beef or chicken with 1 tablespoon taco seasoning for 8–10 minutes, stirring occasionally, until fully cooked.
- Assemble the chalupas by topping each fried shell with cooked meat, 1 cup shredded lettuce, 1 cup diced tomatoes, 1 cup shredded cheese, 1/2 cup sour cream, and 1/4 cup jalapeños if desired.

Keep chalupa shells covered while assembling to maintain crispiness; serve immediately.
