Method
- Heat a large pot over medium heat.
- Add 1 lb ground beef and cook, breaking it apart, until browned, about 5 minutes.
- Stir in 1 medium chopped onion and 2 cloves minced garlic; cook until softened, about 2 minutes.
- Add 3 medium peeled and diced potatoes and stir for 2 minutes.
- Pour in 4 cups beef broth and bring to a boil.
- Reduce heat to low and simmer until potatoes are tender, about 15-20 minutes.
- Stir in 2 cups milk and cook for 2 minutes.
- Add 1 cup shredded cheddar cheese and 1 cup corn, stirring until cheese melts, about 3 minutes.
- Season with 1 tablespoon Worcestershire sauce, salt, and pepper to taste. Ladle into bowls and garnish with optional toppings.
Notes
For a thicker soup, mash some of the potatoes against the side of the pot before adding the cheese.
