Ingredients
  

Main
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup corn fresh or frozen
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes pickles, bacon bits, green onions

Equipment

  • Large pot or Dutch oven
  • Wooden spoon or spatula
  • Knife and cutting board
  • Measuring cups and spoons
  • Grater for cheese (optional)

Method
 

  1. Heat a large pot over medium heat.
  2. Add 1 lb ground beef and cook, breaking it apart, until browned, about 5 minutes.
  3. Stir in 1 medium chopped onion and 2 cloves minced garlic; cook until softened, about 2 minutes.
  4. Add 3 medium peeled and diced potatoes and stir for 2 minutes.
  5. Pour in 4 cups beef broth and bring to a boil.
  6. Reduce heat to low and simmer until potatoes are tender, about 15-20 minutes.
  7. Stir in 2 cups milk and cook for 2 minutes.
  8. Add 1 cup shredded cheddar cheese and 1 cup corn, stirring until cheese melts, about 3 minutes.
  9. Season with 1 tablespoon Worcestershire sauce, salt, and pepper to taste. Ladle into bowls and garnish with optional toppings.

Notes

For a thicker soup, mash some of the potatoes against the side of the pot before adding the cheese.
