  • 1 ½ cups of graham cracker crumbs
  • ½ cup of unsalted butter melted
  • 3 8 oz. packages of cream cheese, softened
  • 1 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 3 large eggs
  • 1 cup of sour cream

Method
 

  1. Preheat the oven to 325°F (160°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl to form the crust mixture.
  3. Press the crumb mixture evenly into the bottom of the springform pan, then bake for about 10 minutes until lightly golden.
  4. In a clean mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  5. Add the granulated sugar and vanilla extract, mixing until creamy.
  6. Add eggs one at a time, mixing well after each addition.
  7. Gently fold in the sour cream until just combined.
  8. Pour the filling over the baked crust.
  9. Bake the cheesecake at 325°F (160°C) for 1 hour, or until the center is slightly jiggly.
  10. Cool the cheesecake gradually in the oven with the door slightly open for about an hour to prevent cracks.
  11. Chill the cheesecake in the refrigerator for at least 4 hours or overnight before serving.
