Ingredients

Main
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 4 8-ounce packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1/4 cup all-purpose flour

Equipment

  • 9-inch springform pan
  • Mixing bowls
  • Electric mixer or whisk
  • Rubber spatula
  • Baking sheet
  • Parchment paper

Method

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to create a sturdy crust.
  3. In another bowl, beat the softened cream cheese until smooth to avoid lumps.
  4. Add 1 cup of sugar and the vanilla extract to the cream cheese. Mix until well combined and fluffy, about 2 minutes.
  5. Add the eggs one at a time, mixing well after each addition for a light and airy texture.
  6. Carefully fold in the sour cream and flour until just combined, avoiding overmixing.
  7. Pour the cheesecake batter into the prepared crust and smooth the top with a spatula.
  8. Bake in the preheated oven at 325°F (160°C) for about 60 minutes, or until the center is set but still slightly jiggly.
  9. Let the cheesecake cool at room temperature for about 1 hour, then refrigerate for at least 3 hours before serving.

Notes

Be sure to let the cheesecake cool gradually to avoid cracking and achieve a smooth surface.
