  • 2 cups fresh pitted cherries
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cherry juice
  • 1/4 cup brandy or kirsch
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • Vanilla ice cream for serving

Method
 

  1. Wash and pit 2 cups of fresh cherries.
  2. In a sauté pan over medium heat, combine cherries, 1/2 cup granulated sugar, 1/4 cup unsweetened cherry juice, and 1 tablespoon cornstarch, stirring until sugar dissolves.
  3. Bring the mixture to a gentle simmer and cook for 5 minutes until the cherries soften and the sauce thickens.
  4. Remove the pan from heat, add 1/4 cup brandy or kirsch, return to heat and carefully ignite to flambé; let the flames extinguish naturally (about 30 seconds).
  5. Stir in 1/2 teaspoon vanilla extract.
  6. Serve the warm cherries over scoops of vanilla ice cream immediately.
