  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 3/4 cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons granulated sugar for rolling
  • 2 teaspoons ground cinnamon for rolling

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt.
  6. Gradually add the dry ingredients into the butter mixture and mix until just combined.
  7. In a small bowl, combine 3 tablespoons granulated sugar and 2 teaspoons ground cinnamon.
  8. Roll the dough into 1-inch balls and coat each in the cinnamon sugar mixture.
  9. Place the dough balls 2 inches apart on the prepared baking sheet.
  10. Bake for 10 to 12 minutes or until edges are lightly golden.
  11. Cool the cookies on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

For extra chewiness, slightly underbake the cookies and let them cool on the baking sheet.
