  • 2 cups cooked chicken shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup chopped celery
  • 1/4 cup sweet pickle relish
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped pecans optional

Method
 

  1. Boil the chicken in a large pot of water over medium-high heat for about 15 minutes, until fully cooked.
  2. Remove the chicken and let it cool slightly, then shred or dice into small pieces.
  3. Chop the celery into small pieces for added crunch.
  4. In a mixing bowl, combine mayonnaise, sweet pickle relish, Dijon mustard, salt, and black pepper to make the dressing.
  5. Add the shredded chicken, chopped celery, and pecans (if using) to the dressing and gently fold until evenly coated.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Taste and adjust seasonings or add more dressing if desired before serving.
  8. Serve the chicken salad on sandwiches, in wraps, or on its own as preferred.

Notes

Chill the salad for at least 30 minutes before serving for best flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days.
