Method
- Place each chicken breast between two pieces of plastic wrap to prevent splatter.
- Using a meat mallet or rolling pin, pound each breast to an even 1/2-inch thickness for uniform cooking.
- Pour olive oil over the chicken and rub it in, then season evenly with salt and black pepper.
- Preheat a grill or skillet over medium-high heat (about 400°F) until hot.
- Cook the chicken for 4–5 minutes on the first side, then flip and cook for another 4–5 minutes for a total of 8–10 minutes, or until the internal temperature reaches 165°F.
- During the last minute of cooking, drizzle lemon juice over the chicken.
- Remove the chicken from heat and let it rest for 3–5 minutes before slicing to allow juices to redistribute.
