Ingredients
  

Main
  • 1 lb boneless skinless chicken breasts, thinly sliced
  • 1 medium onion sliced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 slices provolone or mozzarella cheese
  • 4 hoagie rolls

  • Wooden spoon or spatula

Method
 

  1. Prepare the ingredients by thinly slicing the chicken breasts, onion, and bell peppers, and mincing the garlic.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.
  3. Add the sliced chicken to the skillet, season with salt, pepper, and Italian seasoning, and cook for 5-7 minutes until no longer pink.
  4. Stir in the sliced onion, green bell pepper, red bell pepper, and minced garlic, then sauté for an additional 5-7 minutes until the vegetables are tender.
  5. Lay the cheese slices over the chicken and vegetable mixture in the skillet, cover, and cook for 1 minute until the cheese is melted.
  6. Meanwhile, toast the hoagie rolls in a separate pan or in the oven until lightly crisp, about 2-3 minutes.
  7. Spoon the chicken, vegetable, and cheese mixture into the toasted hoagie rolls and serve immediately.

Notes

For extra flavor, add a splash of hot sauce or a sprinkle of crushed red pepper when sautéing the chicken.
