Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 teaspoon cumin seeds
  • 1 medium onion finely chopped
  • 2 garlic cloves minced
  • 1- inch piece ginger minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon chili powder adjust to taste
  • 8 ounces fresh spinach chopped
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Method
 

  1. Chop the chicken into bite-sized pieces for even cooking.
  2. Heat the vegetable oil in a large skillet over medium heat and add the cumin seeds; let them sizzle for a few seconds.
  3. Add the chopped onion and cook, stirring occasionally, until golden brown, about 5 minutes.
  4. Stir in the minced garlic and ginger and sauté for about 1 minute until fragrant.
  5. Add the chicken pieces, garam masala, turmeric, and chili powder; stir and cook until the chicken is browned, about 5–7 minutes.
  6. Mix in the chopped spinach and cook until wilted, about 2 minutes.
  7. Pour in the heavy cream, stir to combine, and simmer on low heat for 10 minutes.
  8. Season with salt to taste and garnish with fresh cilantro before serving.
