Method
- Rinse the rice under cold water until the water runs clear.
- In a medium saucepan, heat the olive oil over medium heat and add the minced garlic; sauté for about 30 seconds until fragrant, avoiding browning.
- Stir in the rinsed rice to coat with oil and garlic, then pour in the water and add salt to taste (about 1/2 teaspoon).
- Increase heat to high and bring the mixture to a boil.
- Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer for 18–20 minutes until the water is absorbed.
- Remove the saucepan from heat and let it sit covered for 5 minutes to steam.
- Fluff the rice with a fork, then add the fresh lime juice and chopped cilantro, folding gently to combine.
- Transfer the rice to a large serving bowl and serve warm.
Notes
Use freshly squeezed lime juice for best flavor and substitute brown rice if preferred (increase cooking time).
