Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • Salt to taste
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro chopped

Method
 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat and add the minced garlic; sauté for about 30 seconds until fragrant, avoiding browning.
  3. Stir in the rinsed rice to coat with oil and garlic, then pour in the water and add salt to taste (about 1/2 teaspoon).
  4. Increase heat to high and bring the mixture to a boil.
  5. Once boiling, reduce heat to low, cover with a tight-fitting lid, and simmer for 18–20 minutes until the water is absorbed.
  6. Remove the saucepan from heat and let it sit covered for 5 minutes to steam.
  7. Fluff the rice with a fork, then add the fresh lime juice and chopped cilantro, folding gently to combine.
  8. Transfer the rice to a large serving bowl and serve warm.

Notes

Use freshly squeezed lime juice for best flavor and substitute brown rice if preferred (increase cooking time).
