Chipotle Lime Rice

Ingredients
  

Main
  • 1 cup long-grain white rice
  • 2 cups water or chicken broth for added flavor
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 lime zest and juice
  • 2 tablespoons fresh cilantro chopped

Equipment

  • Medium saucepan with lid
  • Measuring cups and spoons
  • Fork for fluffing the rice

Method
 

  1. Rinse the rice under cold water until it runs clear.
  2. In a medium saucepan, bring the water (or chicken broth) to a boil.
  3. In a separate pan, heat the olive oil over medium heat. Add the rinsed rice and toast for 2-3 minutes until lightly golden.
  4. Stir in the salt with the toasted rice.
  5. Pour the boiling water into the rice mixture, stir gently, then cover the saucepan with a lid.
  6. Reduce heat to low and let the rice simmer for 15-18 minutes without lifting the lid.
  7. Remove from heat and let the rice sit, covered, for 5 minutes. Then uncover and fluff with a fork.
  8. Mix in the lime zest, lime juice, and chopped cilantro until well combined.

Notes

Serve as a side dish or enjoy straight from the pot.
