Ingredients
  

Main
  • 8 ounces of fresh chorizo sausage casings removed
  • 6 large eggs
  • 1/4 cup of milk
  • 1 tablespoon of cooking oil
  • Salt and pepper to taste
  • Optional: Fresh cilantro or green onions for garnish

Method
 

  1. Heat your skillet over medium heat for about 1-2 minutes.
  2. Add the 1 tablespoon of cooking oil to the skillet and add the chorizo sausage. Cook, breaking it apart with your spatula, until browned and crispy, about 5-6 minutes.
  3. While the chorizo cooks, whisk together the 6 eggs and 1/4 cup of milk in a bowl until well combined.
  4. Reduce the heat to low once the chorizo is cooked through. Pour the egg mixture into the skillet with the chorizo.
  5. Gently stir and scramble the eggs with the chorizo using the spatula, cooking for about 3-4 minutes until the eggs are just set but still creamy.
  6. Season with salt and pepper to taste. Continue stirring until evenly seasoned.
  7. Remove from heat and serve immediately on plates, garnished with chopped cilantro or green onions if desired.

Notes

For extra flavor, add a pinch of smoked paprika before serving. Serve with tortillas, toast, or fresh fruit for a complete meal.
