Ingredients

Main
  • Chorizo: Fresh or cured depending on your recipe choice.
  • Onion: 1 medium diced.
  • Garlic: 2-3 cloves minced.
  • Bell peppers: 1-2 diced (any color).
  • Canned tomatoes: 1 can diced or crushed.
  • Eggs: 2-4 depending on serving size.
  • Olive oil: 1 tablespoon for cooking.
  • Spices: Pepper cumin, or chili powder to taste.
  • Fresh cilantro: Optional for garnish.

Equipment

  • Large skillet or frying pan
  • Knife and cutting board
  • Measuring spoons
  • Spatula or wooden spoon
  • Mixing bowls

Method

  1. Start by gathering all ingredients and chopping the vegetables. This prevents last-minute scrambling while cooking.
  2. Heat a large skillet over medium heat and add the chorizo. Sauté for about 5-7 minutes until nicely browned, and crumbly.
  3. Add the diced onion and minced garlic to the skillet. Cooking them together enhances the overall flavor.
  4. Mix in the diced bell peppers and cook for another 5 minutes. This adds a bit of sweetness and color to your dish.
  5. Pour in the canned tomatoes and their juice. This creates a rich sauce when the dish simmers.
  6. Add spices to your liking, including pepper or chili powder. Seasoning is crucial for balancing flavors.
  7. Reduce the heat, cover, and let simmer for 10-15 minutes. This melds the flavors beautifully.
  8. Crack the eggs on top of the mixture and cover the skillet. Cook until the eggs are set to your preference.

Notes

For an extra kick, fine chop some jalapeños or use spicy chorizo.
