Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1/2 teaspoon red pepper flakes
  • 1 cup white wine like Pinot Grigio
  • 1 pound fresh clams cleaned
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste
  • 1 pound spaghetti or linguine

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Add spaghetti or linguine and cook until al dente, about 8-10 minutes, following package instructions.
  3. Drain the pasta in a colander, reserving a cup of pasta water.
  4. In a large skillet over medium heat, warm olive oil.
  5. Add minced garlic and red pepper flakes; sauté for about 1 minute until fragrant.
  6. Pour in white wine and simmer until reduced by half, about 3-4 minutes.
  7. Add cleaned clams, cover, and cook until clams open, about 5-7 minutes; discard any unopened clams.
  8. Remove from heat and add cooked pasta; toss to combine, adding reserved pasta water if needed.
  9. Stir in chopped parsley and season with salt and pepper to taste before serving.
