- Wash and slice the carrots into thin rounds for even cooking.
- Bring a medium saucepan of water to a rolling boil over high heat, add the carrots, and cook for 3-5 minutes until just tender.

- Add the drained carrots, chopped green bell pepper, and chopped red onion to the dressing, and toss gently until evenly coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Stir the salad, adjust seasoning if needed, and transfer to a serving dish.
