  • 1 box Jiffy Corn Muffin Mix
  • 1 can creamed corn 15 oz
  • 1 can whole corn 15 oz, drained
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1 cup shredded cheddar cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, stir together the creamed corn and drained whole corn.
  3. Add the sour cream to the bowl and combine until smooth.
  4. Sprinkle in the Jiffy Corn Muffin Mix and stir gently until just combined.
  5. Pour in the melted butter and mix until just incorporated.
  6. Add the salt and black pepper, mixing to incorporate evenly.
  7. Gently fold in the shredded cheddar cheese, reserving some for topping if desired.
  8. Pour the mixture into a greased 9x13-inch baking dish and spread evenly; bake for 45 minutes or until golden brown and a toothpick comes out clean.

Notes

Let the casserole rest for a few minutes after baking to set before serving.
