- Preheat the waffle maker to medium heat and lightly grease the plates.
- In a mixing bowl, beat the eggs until frothy, about 1 minute.
- Add the cottage cheese and vanilla extract (if using) to the eggs and stir until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until just combined, about 30 seconds.
- Stir in the melted butter or oil until the batter is uniform.
- Pour about 1/2 cup of batter per waffle onto the preheated waffle maker, close the lid, and cook for 4–5 minutes or until golden brown and crisp.
- Carefully remove the waffles with a spatula and serve immediately with your favorite toppings.
Notes
For extra crispy waffles, let them cool on a wire rack for a few minutes after cooking.
