Method
 

  1. Preheat the waffle maker to medium heat and lightly grease the plates.
  2. In a mixing bowl, beat the eggs until frothy, about 1 minute.
  3. Add the cottage cheese and vanilla extract (if using) to the eggs and stir until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gently fold the dry ingredients into the wet mixture until just combined, about 30 seconds.
  6. Stir in the melted butter or oil until the batter is uniform.
  7. Pour about 1/2 cup of batter per waffle onto the preheated waffle maker, close the lid, and cook for 4–5 minutes or until golden brown and crisp.
  8. Carefully remove the waffles with a spatula and serve immediately with your favorite toppings.

Notes

For extra crispy waffles, let them cool on a wire rack for a few minutes after cooking.
