  • 12 fresh jalapeno peppers
  • 8 oz cream cheese softened
  • 1 cup sharp cheddar cheese shredded
  • 1/2 cup cooked bacon diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup breadcrumbs

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Carefully slice each jalapeno in half lengthwise and remove the seeds and membranes. Keep some seeds if you want extra heat.
  3. In a bowl, combine the softened cream cheese, shredded cheddar cheese, and diced bacon. Mix until creamy and well blended.
  4. Add garlic powder, onion powder, smoked paprika, salt, and pepper to the cheese mixture. Mix to incorporate all flavors.
  5. Spoon the cheese mixture into each jalapeno half, packing it in well.
  6. Sprinkle each stuffed jalapeno with breadcrumbs for a crunchy topping.
  7. Place the filled jalapenos in a baking dish.
  8. Bake in the preheated oven for 20 minutes or until the tops are golden brown and bubbly.
  9. Remove from oven and let cool slightly for 5 minutes.
  10. Serve warm and enjoy!

Notes

For extra smoky flavor, grill the jalapeno poppers instead of baking. Adjust heat level by keeping seeds or using milder peppers.
