  • 1 pound fresh spinach cleaned and trimmed
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Wash the spinach thoroughly to remove any grit and drain well.
  2. In a large skillet over medium heat, add the spinach and sauté for 2-3 minutes until wilted; remove from the skillet and set aside.
  3. In the same skillet, melt the butter over medium heat.
  4. Whisk in the flour and cook for 1 minute, ensuring it doesn’t brown.
  5. Gradually pour in the milk while whisking vigorously to form a smooth sauce.
  6. Stir in the salt, black pepper, and nutmeg to season the sauce.
  7. Return the cooked spinach to the skillet and stir to coat with the sauce.
  8. Stir in the grated Parmesan cheese until melted, then taste and adjust seasoning.
  9. Serve the creamed spinach warm as a decadent side dish.
