- In a large bowl, whisk together the flour, yeast, salt, and sugar. This helps evenly distribute the yeast.
- Gradually add warm water to the dry ingredients, stirring until smooth to create a thick pancake-like batter.
- Cover the bowl with a clean kitchen towel and let it rise in a warm spot for about 1 hour, until light and bubbly.
- Heat your griddle or frying pan over medium heat and lightly grease the surface.
- Dissolve the baking soda in a small bowl with a little warm water and stir into the batter to create holes.
- Pour batter into cookie cutter rings on the griddle, filling about halfway, and cook for 5 minutes or until bubbles form and tops look set.
- Remove the rings and flip the crumpets, cooking for another 2-3 minutes until both sides are golden brown.
