Method
- Rinse the pitted dates under warm water to remove any residual sugars.
- In a medium saucepan, combine the rinsed dates and 1 cup water.
- Bring to a gentle boil over medium heat, then reduce heat to low and simmer for about 20 minutes until the dates are soft.
- Transfer the mixture to a blender and blend until smooth, scraping down the sides as needed.
- Place a fine mesh strainer or cheesecloth over a bowl and pour the blended mixture through, pressing firmly to extract all the liquid.
- Taste the syrup and stir in lemon juice if desired to balance the sweetness.
- Allow the syrup to cool completely, then transfer it to a jar and seal tightly.
- Store the date syrup in the refrigerator for up to one month.
Notes
For a thicker syrup, simmer a bit longer and reduce the liquid further before blending.
