Method
- Rinse the deer heart under cold water to remove any blood or impurities.
- Trim any fat or connective tissue from the heart using a sharp knife.
- Heat the olive oil in a large skillet over medium heat until shimmering.
- Add the diced onion and minced garlic and sauté for about 5 minutes until soft.
- Add the deer heart to the skillet and sear on all sides for 3 to 4 minutes per side until browned.
- Transfer the heart to a braising pot, pour in the broth and Worcestershire sauce, then sprinkle with dried thyme, salt, and pepper.
- Cover the pot, reduce the heat to low, and simmer for 1 hour until the heart is tender.
- Remove the heart from the pot and let it rest for 5 minutes, then slice against the grain and serve.
Notes
Always slice the cooked heart against the grain to maintain tenderness.
