  • 1 lb ground beef
  • 1 lb chorizo casings removed
  • 1 onion diced
  • 2 bell peppers diced (any color)
  • 2 medium tomatoes diced
  • 3 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 2 tbsp olive oil
  • 1/4 cup fresh cilantro chopped (for garnish)

  • Large skillet or a traditional discada
  • Spatula
  • Knife and cutting board
  • Measuring cups and spoons

Method
 

  1. Heat the skillet over medium heat until hot.
  2. Add 2 tbsp olive oil and warm for 1 minute.
  3. Add ground beef and chorizo; cook, stirring occasionally, for 7-10 minutes until browned and fully cooked.
  4. Stir in diced onion and minced garlic; sauté for 2-3 minutes until onions are translucent.
  5. Add diced bell peppers; cook for 4-5 minutes until they soften slightly.
  6. Stir in diced tomatoes; simmer for 5 minutes to combine flavors.
  7. Season with salt, black pepper, and cumin; cook for 1-2 minutes.
  8. Remove from heat, garnish with chopped cilantro, and let rest for 5 minutes before serving.

Notes

For best flavor, allow the discada to rest for a few minutes before serving so the flavors can meld together.
