  • 3 cups duck broth
  • 2 cups shredded cooked duck
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon fresh thyme chopped
  • 1 tablespoon fresh rosemary chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional: sesame oil for finishing

Method
 

  1. Heat 1 tablespoon olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic; sauté for 3-4 minutes until translucent.
  3. Stir in diced carrots and celery; cook for 5 minutes until slightly softened.
  4. Pour in duck broth and bring to a gentle boil over medium-high heat.
  5. Add shredded duck to the pot and stir to combine.
  6. Season with fresh thyme and rosemary, stirring well.
  7. Reduce heat to low and simmer, uncovered, for 30 minutes to meld flavors.
  8. Taste and adjust seasoning with salt and pepper.
  9. Drizzle optional sesame oil over the soup just before serving for extra flavor.

Notes

For an extra layer of flavor, drizzle a bit of sesame oil just before serving and serve with crusty bread or a simple green salad.
