Ingredients
  

Main
  • 4 large eggs
  • 1 tablespoon oil
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • 1 green chili finely chopped
  • 1 teaspoon ginger-garlic paste
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • ½ teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves chopped (for garnish)

Equipment

  • Non-stick frying pan or kadai
  • Spatula or wooden spoon
  • Measuring cups and spoons
  • Chopping board
  • Knife

Method
 

  1. Heat 1 tablespoon oil in a non-stick frying pan or kadai over medium heat until shimmering, about 1 minute.
  2. Add the finely chopped onion and sauté until translucent, about 3 minutes.
  3. Stir in the chopped green chili and 1 teaspoon ginger-garlic paste; cook for 1 minute.
  4. Add the chopped tomato and cook until soft, about 2-3 minutes.
  5. Sprinkle ¼ teaspoon turmeric powder, ½ teaspoon red chili powder, and salt to taste; stir for 30 seconds.
  6. Whisk the eggs in a bowl until fully combined.
  7. Pour the whisked eggs into the pan and gently mix with the sautéed vegetables, cooking and stirring occasionally until just set but still creamy, about 3-4 minutes.
  8. Remove from heat and garnish with chopped fresh coriander leaves before serving.

Notes

For an extra touch, add a dollop of butter right before serving.
