  • 2 cups basmati rice
  • 4 large eggs
  • 1 large onion thinly sliced
  • 2 tomatoes chopped
  • 2 tablespoons ginger-garlic paste
  • 1/4 cup plain yogurt
  • 3 tablespoons biryani masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder adjust to taste
  • 3 tablespoons cooking oil or ghee
  • 4 cups water
  • Fresh cilantro for garnish
  • Mint leaves for garnish
  • Salt to taste

Method
 

  1. Boil the eggs: In a medium pot, bring water to a boil, add the eggs, and cook for about 10 minutes for hard-boiled perfection.
  2. Rinse the rice: While the eggs cook, rinse the basmati rice under cold water until it runs clear.
  3. Sauté the onions: In a large pot, heat the oil over medium heat. Add sliced onions and sauté until golden brown.
  4. Add spices and tomatoes: Stir in ginger-garlic paste, turmeric, and red chili powder. After 1 minute, add chopped tomatoes and cook until they soften.
  5. Mix in yogurt and masala: Lower heat and stir in plain yogurt and biryani masala.
  6. Cook the rice: Add rinsed rice and water to the pot, season with salt, and stir gently to combine.
  7. Add boiled eggs: Peel the eggs and place them gently into the pot without breaking.
  8. Simmer: Cover and simmer on low heat for 20 minutes until the rice absorbs the flavors.
  9. Rest: Remove from heat and let the biryani rest, covered, for at least 10 minutes.
  10. Garnish and serve: Fluff the rice, garnish with fresh cilantro and mint leaves before serving.

Notes

Do not skip the resting period after cooking; it helps the flavors meld beautifully.
