- Boil the eggs: In a medium pot, bring water to a boil, add the eggs, and cook for about 10 minutes for hard-boiled perfection.
- Rinse the rice: While the eggs cook, rinse the basmati rice under cold water until it runs clear.
- Sauté the onions: In a large pot, heat the oil over medium heat. Add sliced onions and sauté until golden brown.
- Add spices and tomatoes: Stir in ginger-garlic paste, turmeric, and red chili powder. After 1 minute, add chopped tomatoes and cook until they soften.
- Mix in yogurt and masala: Lower heat and stir in plain yogurt and biryani masala.
- Cook the rice: Add rinsed rice and water to the pot, season with salt, and stir gently to combine.
- Add boiled eggs: Peel the eggs and place them gently into the pot without breaking.
- Simmer: Cover and simmer on low heat for 20 minutes until the rice absorbs the flavors.
- Rest: Remove from heat and let the biryani rest, covered, for at least 10 minutes.
- Garnish and serve: Fluff the rice, garnish with fresh cilantro and mint leaves before serving.
