Ingredients

  • 3 cups einkorn flour
  • 1 cup warm water
  • 2 tablespoons honey
  • 1 tablespoon salt
  • 1 teaspoon instant yeast

  • Clean kitchen towel or plastic wrap

Method
 

  1. In a large mixing bowl, combine the einkorn flour, instant yeast, and salt. Mix well for even distribution. (Step 1)
  2. Gradually pour in the warm water and honey while mixing. Continue stirring until a shaggy dough forms. (Step 2)
  3. Stir until the dough comes together but do not over-mix. (Step 3)
  4. Turn the dough onto a lightly floured surface and knead for 5-8 minutes until smooth and elastic. (Step 4)
  5. Shape the kneaded dough into a ball and place in a lightly oiled bowl. Cover with a kitchen towel and let rise in a warm place for 1 hour or until doubled in size. (Step 5)
  6. Punch down the risen dough gently to release air. Shape into a loaf and place on a baking sheet. (Step 6)
  7. Cover the shaped loaf and let rise again in a warm place for 30 minutes. (Step 7)
  8. Preheat the oven to 375°F (190°C). Bake the loaf for 30 minutes until golden brown and hollow-sounding when tapped. (Step 8)

Notes

Let the bread cool completely before slicing. For best results, measure flour by weight and ensure water is warm but not hot.
