Ingredients

Main
  • 1 pound fava beans shelled
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs such as parsley or mint, for garnish

Equipment

  • Large pot
  • Colander
  • Skillet
  • Wooden spoon
  • Knife
  • Cutting board

Method

  1. Shell the fava beans from their pods. This step is crucial for tender, flavorful beans.
  2. Bring a large pot of salted water to a boil. Add the shelled fava beans and cook for about 3-5 minutes until bright green and easily mashed.
  3. Drain the beans in a colander and let them cool slightly.
  4. Pinch the beans to remove their outer skins for a creamy interior.
  5. In a skillet, heat olive oil over medium heat and add minced garlic. Cook for 1-2 minutes until fragrant.
  6. Add the peeled fava beans to the skillet and toss gently with garlic. Season with lemon juice, salt, and pepper. Cook for 2-3 minutes to combine flavors.
  7. Transfer to a serving dish. Garnish with chopped fresh herbs and serve warm or at room temperature.

Notes

Make sure not to overcook the fava beans; they should be tender but still hold their shape.
