  • 10 rice wrappers
  • 1 cup cooked shrimp peeled and deveined
  • 1 cup vermicelli noodles cooked
  • 1 cup lettuce torn
  • 1 cup cucumber julienned
  • 1 cup carrots shredded
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • Dipping sauce: peanut sauce or hoisin sauce

  • Cutting board
  • Knife
  • Plate for rolling

Method
 

  1. Start by preparing all your fillings. Washing, peeling, and cutting vegetables for easy assembly, about 5 minutes.
  2. Fill a large bowl with warm water and dip one rice wrapper in for about 10 seconds until pliable. Remove gently and place on a clean plate.
  3. Lay the softened wrapper flat on the plate and place ingredients about one-third of the way up from the edge closest to you.
  4. Add a few pieces of lettuce, shrimp, vermicelli noodles, cucumber, carrots, and herbs.
  5. Fold the bottom edge over the fillings. Tuck in the sides and continue rolling tightly until sealed, about 1 minute.
  6. Repeat with remaining rice wrappers and fillings. Keep assembled rolls covered with a damp cloth if not serving immediately.
  7. Serve the rolls on a platter alongside your choice of dipping sauce. Enjoy immediately or within 2 hours for best texture.

Use fresh, crisp ingredients and handle rice wrappers gently to prevent tearing.
