- In a large mixing bowl, combine 1 cup cornmeal, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
- Whisk in 1 cup buttermilk and 1 large egg until the batter is smooth.
- Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot.
- Using a ladle, pour portions of the batter into the hot oil, leaving space between each piece.
- Fry each piece for 3-4 minutes on each side or until crispy and golden brown.
- Transfer the fried cornbread to a paper towel-lined plate to drain excess oil.
- Repeat with the remaining batter, adding more oil as needed.
- Serve the fried cornbread warm, plain or with your favorite toppings.
