  • 1 cup cornmeal
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 2 tablespoons vegetable oil plus more for frying

Method
 

  1. In a large mixing bowl, combine 1 cup cornmeal, 1/2 teaspoon baking soda, and 1/4 teaspoon salt.
  2. Whisk in 1 cup buttermilk and 1 large egg until the batter is smooth.
  3. Heat about 1/4 inch of vegetable oil in a frying pan over medium heat until hot.
  4. Using a ladle, pour portions of the batter into the hot oil, leaving space between each piece.
  5. Fry each piece for 3-4 minutes on each side or until crispy and golden brown.
  6. Transfer the fried cornbread to a paper towel-lined plate to drain excess oil.
  7. Repeat with the remaining batter, adding more oil as needed.
  8. Serve the fried cornbread warm, plain or with your favorite toppings.
