Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish with butter or cooking spray.
  3. In a mixing bowl, whisk together flour, baking powder, and baking soda.
  4. In another bowl, beat sugar, vegetable oil, and eggs until smooth.
  5. Stir in the drained fruit cocktail until evenly distributed.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in chopped nuts, if using.
  8. Pour batter into the prepared baking dish and spread evenly.
  9. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool completely on a cooling rack before frosting.
